Baba Ghanoush (Smoky Eggplant)

Ingredients for Baba Ghanoush (Smoky Eggplant)

  • 1 large eggplant
  • 1 tbsp tahini
  • 2 garlic cloves
  • 1 lemon
  • 2 tbsp olive oil
  • Salt & pepper


To prepare baba ghanoush, preheat the oven to 200 ºC first. Then with a sharp knife prick the skin of the eggplant a few times. Otherwise, it will explode while roasting in the oven.

After that, place the eggplant on a baking tray and roast it for 20 minutes until it is tender. When the eggplant is cool enough to handle, remove its skin. Then add the flesh of eggplant with olive oil, salt, pepper, tahini, garlic cloves and lemon juice to a bowl (or a food processor) and blend them with an electric hand blender until smooth and creamy.

Then pour baba ghanoush (smoky eggplant) into a small bowl or plate, drizzle it with olive oil and paprika powder and serve it with crackers or with toasted pita bread triangles.

Note: Do not wash the eggplant under the water to remove its burned skin, because the water takes away the smoky smell and flavor off the eggplant; which we want to keep.
