Baked Zucchini

Baked zucchini is a tasty appetizer made with pecorino cheese, flour, breadcrumbs, eggs, and zucchini and served with a Greek yogurt sauce.

Ingredients for:

  • 2 zucchini (medium)
  • 2 eggs
  • 100 g pecorino cheese (shredded)
  • 150 g breadcrumbs
  • 100 g flour
  • 1 tsp oregano
  • 1 tsp sea salt

For dipping sauce:

  • 125 g Greek yogurt
  • 1 tsp dried dill
  • 1 tsp sea salt

To prepare this appetizer, trim both ends of zucchini first and then cut them in half and then into 12 strips.

After that, prepare 3 bowls and in the first bowl mix the breadcrumbs with shredded pecorino cheese and oregano. In the second bowl, beat the eggs with sea salt, and in the third bowl, add the flour. Now roll and cover each piece of zucchini first with the flour and then shake off the excess flour. Next, dip the floured zucchini strips in the egg and then in the breadcrumb mixture to completely coat the zucchini strips.

Then line a baking tray with parchment paper and place the coated zucchini strips on the tray and repeat with the remaining zucchini pieces.

Now bake the prepared zucchini strips in the preheated oven to 220º C for 20 minutes until they are golden.

For dipping sauce:

Mix the Greek yogurt with dried dill and salt and serve the zucchini strips with the sauce.
