Baked Zucchini

Ingredients for:
Baked Zucchini

  • 2 zucchini (medium)
  • 2 eggs
  • 100 g pecorino cheese (shredded)
  • 150 g breadcrumbs
  • 100 g flour
  • 1 tsp oregano
  • 1 tsp sea salt

For dipping sauce:

  • 125 g Greek yogurt
  • 1 tsp dried dill
  • 1 tsp sea salt


To prepare baked zucchini, first trim both ends of zucchini and then cut each of them into 12 strips.

Then prepare 3 bowls, in one bowl mix the breadcrumbs with shredded pecorino cheese and oregano. In another bowl, whisk the eggs with sea salt and in the third bowl, add the flour. Now dip each zucchini piece first in the flour and then shake off the excess flour. After that, dip the floured zucchini piece in the egg and then in the bread crumb mixture, completely coating each side of zucchini strips.

Then place the coated zucchini on a parchment paper lined baking tray and repeat with the remaining zucchini pieces.

Now bake the strips in preheated oven to 220 ºC for 20 minutes until they are golden.

For dipping sauce:

Mix the Greek yogurt with dried dill and salt and serve the zucchini strips with it.
