Ingredients for:
Eggplant and Yogurt Appetizer

  • 1 large eggplant
  • 2 cups of Greek yogurt
  • 2 cloves of garlic
  • Salt

Instructions

To make the Eggplant and Yogurt Appetizer, roast the eggplant on the gas stove or on the grill for about 15 to 20 minutes until its skin is burned. Because roasting the eggplant imparts a delicate smoky flavor to its flesh. Then, when the eggplant flesh is tender, remove it from the heat.

After that, leave the eggplant in a bowl and cover it with Cling Film and let it cool, because this makes peeling the eggplant easier and also conserves and intensifies its smoky flavor. Next, discard the charred skin of the eggplant and finely chop its flesh. Meanwhile, chop the garlic cloves as well. Finally, in a bowl, mix the chopped eggplant and garlic cloves with Greek yogurt and salt. You can serve this flavorful appetizer with potato chips or salty crackers.


Note: Do not wash the eggplant under the water to remove its burned skin, because the water eliminates the smoky smell and flavor of the eggplant and that is exactly what we want to preserve.
