Potato Cakes
- 1 potato (large)
- 1 onion (medium)
- 2 eggs
- 3 tbsp olive oil
- 1 tsp salt
- 1/4 tsp turmeric
Instructions
To prepare this appetizer, first, peel and then grate the potato and onion. After grating the potato and onion, pour them in a fine-mesh strainer and with a spoon try to squeeze out excess liquid from the onion and potato.
Now in a bowl mix the eggs with salt and turmeric first. Then add the grated onion and potato and mix them well. After that, place a little non-stick frying pan (14 cms) over medium-high heat and fry the potato cakes on each side with olive oil until they are lightly golden.
