Breakfast Quesadillas

Breakfast Quesadillas with their crispy tortilla bread and fluffy scrambled eggs will keep you full all morning and are so easy to make.

Ingredients for Breakfast Quesadillas

  • 2 flour tortillas
  • 2 eggs
  • 20 g baby spinach
  • 40 g shredded cheddar or mozzarella cheese
  • 1 tbsp olive oil
  • Salt & pepper


First, in a medium bowl, beat the eggs with a fork and season them with salt and pepper.

Then in a skillet over medium heat, add the olive oil. When the olive oil is warm, add the eggs and stir frequently until they are fluffy and set and when the eggs are cooked, remove the skillet from the heat.

Next, place another skillet over medium heat and add 1 tortilla bread to the pan. Then add half of the cheese, the prepared eggs, the spinach, and the rest of the cheese to the tortilla and spread them evenly. Now add the other tortilla on top. When the bottom tortilla is lightly brown and crispy, carefully flip the quesadilla over with a spatula and cook the other side as well, which will take about 2 minutes.

Then transfer the quesadilla from the skillet to a cutting board and allow to rest for 1 minute. After that, cut it into triangles. Now your breakfast quesadillas are ready to serve.

Notes: You can add a variety of many other toppings to quesadillas such as mushrooms, broccoli, onions, or bell peppers. The good thing is that these quesadillas will keep you full all morning.
