Quesadillas: this breakfast with its crispy tortilla and fluffy scrambled eggs will keep you full all morning and it is really easy to make.

Ingredients for Breakfast Quesadillas
- 2 flour tortillas
- 2 eggs
- 20 g baby spinach
- 40 g shredded cheddar or mozzarella cheese
- 1 tbsp olive oil
- Salt & pepper
Instructions for breakfast quesadillas
First, in a medium bowl, whisk the eggs and season them with salt and pepper.
Then in a skillet over medium heat, add the olive oil. When the olive oil is warm, add the eggs and stir frequently until they are fluffy and set. When the eggs are cooked, remove the skillet from the heat.
Next, place another skillet over medium heat and add 1 tortilla to the pan. Then add half of the cheese, the eggs, spinach, and the rest of the cheese and spread them evenly. Now add the other tortilla on top. When the bottom tortilla is lightly brown and crispy, carefully flip the quesadilla over and cook the other side as well which will take about 2 minutes.
Then remove the quesadilla to a cutting board and allow to rest for 1 minute. After that, cut it into triangles and your breakfast quesadillas are ready to serve.
