Ingredients for:
Egg Muffins

  • 2 eggs
  • 25 g spinach
  • 1 small red paprika
  • 1 small long green pepper
  • 60 g shredded mozzarella cheese
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

In oredr o prepare these egg muffins, first wash and then chop finely the red paprika and green pepper. Then mince the spinach.

Afer that, in a bowl whisk the eggs with a little bit of salt and pepper and then add the chopped ingredients to them and mix them well.

Now grease the muffin molds with olive oil and then pour the prepared mixture in equal parts into them. But do not overfill the muffin cups just about 3/4 full, because they will expand in the oven. Then top each cup with shredded mozzarella cheese.

Bake the muffins in the oven to 180 ºC for 20 minutes until they are lightly golden. Muffins will puff in the oven but they will sink upon cooling. Allow muffins to cool during 5 minutes and then remove them from the molds. Your breakfast is ready to serve.
