Oatmeal Muffins

Oatmeal muffins are very delicious and so easy to make. Following this recipe, you can prepare them in just 30 minutes for your breakfast.

Ingredients for Oatmeal Muffins

  • 40 g rolled oats
  • 90 g Greek yogurt
  • 1 egg
  • 50 g vegetable oil
  • 30 g brown sugar
  • 80 g flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 60 g raisins

Instructions

To prepare these oatmeal muffins, in a large bowl mix the rolled oats with Greek yogurt with a spoon. When the oats and yogurt are combined, add the egg to the oats mixture and mix them. After that, add the brown sugar and vegetable oil to the batter and mix them with the spoon until completely combined.

Then first sift the flour with the baking powder, baking soda, and salt and then add them to the oats mixture and mix until just incorporated. After adding the flour, do not over mix the batter, or the muffins will come out hard and dry.

Next, roll the raisins in the flour first, then shake the excess flour and add them to the batter.

Now it is time to divide the batter between the muffin molds. Then bake the oatmeal muffins in the preheated oven to 200 ºC for 15 minutes until they are golden brown on top.

Notes: If you prefer, instead of raisins you can add dried blueberries, chocolate chips, or chopped almonds and walnuts to the muffins.
Also, you can use any neutral oil such as sunflower oil or canola oil to make the oatmeal muffins.
