Ingredients for:
Oatmeal Muffins

  • 40 g rolled oats
  • 90 g Greek yogurt
  • 1 egg
  • 50 g vegetable oil
  • 30 g brown sugar
  • 80 g flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 60 g raisins

Instructions for oatmeal muffins

To prepare these muffins, in a large bowl and with a spoon, mix the rolled oats with Greek yogurt. Then add the egg to the oats mixture and combine them. After that, add the brown sugar and vegetable oil to the batter and mix them with the spoon until combined.

Then first sift the flour, baking powder, baking soda and salt and then add them to the oats mixture and mix until just incorporated. Do not over mix the batter or the muffins will be tough and dry.

After that, roll the raisins into the flour first, then shake them and add them to the batter.

Now divide the batter between the muffin moldes and bake the muffins in preheated oven to 200 ºC for 15 minutes until they are golden brown.

Note:

If you prefer, instead of raisins you can add dried blueberries, chocolate chips, almonds or walnuts in the muffins.
Also, you can use any neutral oil such as sunflower oil or canola oil for making the muffins.
