Ingredients for:

  • 160 g pumpkin puree
  • 150 g flour
  • 100 g sugar
  • 80 g unsalted butter
  • 60 ml milk
  • 1 egg
  • 50 g raisins
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions for pumpkin muffins

To prepare these pumpkin muffins, in a bowl mix together the flour, baking soda, cinnamon and salt.

Then in a large bowl , add the sugar and egg and whisk them until combined. Next, add the room temperature butter to the bowl and mix well. After that, add the pumpkin puree and milk to the rest of the ingredients and whisk until they are completely combined. Now add the raisins and flour mixture to the bowl and mix gently just until they are combined. After adding the flour mixture, do not over mix the batter, because mixing the batter too much will activate the gluten in the flour and when it comes to baking the muffins, they will come out dry.

Then divide the batter among muffin cups and bake them in preheated oven to 190 ºC for 25 minutes. Wait for 20 minutes until the pumpkin muffins are completely cool and then serve them.
