Ingredients for Pumpkin Muffins
- 160 g pumpkin puree
- 150 g flour
- 100 g sugar
- 80 g unsalted butter, room temperature
- 60 ml milk
- 1 egg
- 50 g raisins
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
To prepare these pumpkin muffins, first, in a bowl mix the flour, baking soda, cinnamon, and salt together.
Then in a large bowl, add the sugar and egg and whisk them until they are completely combined. Next, add the room temperature butter to the bowl and mix well. After that, add the pumpkin puree and milk to the rest of the ingredients and whisk until they are combined. Now add the raisins and flour mixture to the bowl and mix gently just until they are combined. After adding the flour mixture, do not over mix the batter because mixing the batter too much will activate the gluten in the flour, and because of that when it comes to baking the muffins, they will come out dry.
Then divide the batter among the muffin cups ( fill them up to 3/4 ), and bake the pumpkin muffins in the preheated oven to 190 ºC for 25 minutes. After taking them out from the oven, wait for about 20 minutes until they are completely cool, and then you can enjoy eating your breakfast.
