Ingredients for:
Banana Bread
- 2 bananas (200 g)
- 200 g flour
- 100 g unsalted butter, softened to room temperature
- 80 g sugar
- 2 eggs
- 50 g brown sugar
- 50 ml heavy cream
- 1 tbsp lemon zest
- 1 tsp ground cinnamon
- 40 g dark chocolate (chocolate chips)
- 25 g walnuts
- 1 tsp baking powder
- 1 tsp baking soda
Next, in a bowl mash the bananas with a fork and then add the brown sugar, heavy cream, butter and lemon zest and mix them well.
After that, in a large bowl with an electric hand mixer, beat the eggs with sugar until they are paler in color, about 5 minutes. Then add the mashed bananas mixture to the eggs and mix them with a silicone spatula. Now add the dry ingredients and chocolate into the wet ingredients and mix them just until all flour pockets are dissolved. But do not overmix them.
Then grease a 30×10 cm loaf pan, spoon the batter into it and add the chopped walnuts on top of it. Bake the banana bread in preheated oven to 180 ºC for 40 minutes until when insert a toothpick, it comes out clean.
