Banana Bread

Banana bread with its moist texture and soft crumb is incredibly delicious and very easy to make. This perfect recipe is from my brother.

Banana Bread recipe

Ingredients for Banana Bread

  • 2 bananas (200 g)
  • 200 g flour
  • 100 g unsalted butter, softened to room temperature
  • 80 g sugar
  • 2 eggs
  • 50 g brown sugar
  • 50 ml heavy cream
  • 1 tbsp lemon zest
  • 1 tsp ground cinnamon
  • 40 g dark chocolate (chocolate chips)
  • 25 g walnuts
  • 1 tsp baking powder
  • 1 tsp baking soda

Instructions

To prepare banana bread, sift the flour, baking powder, baking soda, and ground cinnamon in a bowl and then set them aside. Then with a knife, chop the walnuts and chocolate.

Next, in a bowl mash the bananas with a fork. After that, add the brown sugar, heavy cream, butter, and lemon zest to the mashed bananas and mix well.

Now in a large bowl, with an electric hand mixer, beat the eggs with sugar until they are paler in color, about 5 minutes. Then add the mashed bananas mixture to the eggs and mix them with a silicone spatula. Next, add the sifted dry ingredients and also the chocolate into the wet ingredients and mix them just until all flour pockets are dissolved. But do not overmix the batter.

It is time to grease a 30×10 cm loaf pan mold. Then spoon the batter into the mold and add the chopped walnuts on top. Now bake the banana bread in the preheated oven to 180 ºC for 40 minutes until when inserting a toothpick, it comes out clean.


Notes: You can cut the banana bread into slices and keep it in an airtight container in the freezer for up to one month. Then simply warm the banana bread slices for 10 seconds in the microwave before eating them. They will be as soft and delicious as fresh from the oven.
