Blueberry Muffins

For 6 Muffins

  • 14 g Unsalted butter
  • 75 g Sugar
  • 2 Eggs
  • 114 g Flour
  • 1 1/2 tsp Baking powder
  • 1/2 tsp salt
  • 1/4 tsp Baking soda
  • 30 ml Cream
  • 80 g Bleuberry jam
  • 50 g Blueberries
  • 20 g Powdered sugar

Instructions for Blueberry Muffins

To make these blueberry muffins, first mix the flour, salt, baking powder and baking soda in a bowl. Then sift the mixture 2 or 3 times and then save it. This way the muffins will rise more in the oven. Now mix the softened butter with sugar, eggs and cream with an electric hand mixer for 3 minutes until the mixture is paler in color. Then add the sifted flour to the wet mixture without beating it too much. Because beating it too much activates the gluten in the flour and when it comes to baking the muffins, they will come out dry.

Then prepare the muffin molds and pour the dough into them. And bake the muffins in a preheated oven to 180 ºC for 30 minutes. After that leave the muffins to cool. Now with a sharp knife, cut a circle on the top of each muffin and then fill them with the blueberry jam. Finally, add 3 or 4 blueberries on top of each muffin and sprinkle with powdered sugar.
