Rice flour cookies are so tasty and smell like heaven. The combination of the ingredients used in these cookies makes them irresistible.

Ingredients for: Rice Flour Cookies
- 150 g rice flour
- 1 egg yolk
- 1 tbsp rose water
- 60 g powdered sugar
- 70 g unsalted butter
- 1 tbsp milk
- 1 tsp cardamom
- 1/4 tsp grounded saffron
- 1 tbsp poppy seeds
To make these rice flour cookies, grind the cardamom with an electric spice grinder or with a mortar and pestle. Then microwave the butter for 30 seconds until it is soft.
After that, in a large bowl, add the rice flour, powdered sugar, melted butter, milk, and rose water. In the same bowl, first, sift the grounded cardamom and then add it to the rest of the ingredients. Next, with a spatula stir all the ingredients until they are well combined. Then in a separate bowl beat the egg yolk for about 3 minutes and add it to the ingredients and stir it to combine completely with the mixture. After that, leave the batter in the refrigerator for about 30 minutes.
After 30 minutes, remove the batter from the refrigerator. Then form the batter into 3 cm balls and place them about 4 cm apart on a cookie sheet covered with parchment paper. Next, gently press with your finger the batter balls and form them into 1 cm thick flat cookies. Then dissolve the ground saffron in 1 tablespoon of boiling water and brush the saffron water over the cookies. Finally, garnish the prepared rice cookies with poppy seeds.
Then bake the cookies in the preheated oven to 160º C for 20 minutes.
