Rice flour cookies are tasty and also smell like heaven. The combination of all ingredients makes these cookies irresistible.

Ingredients for Rice Flour Cookies
- 150 g rice flour
- 1 egg yolk
- 1 tbsp rose water
- 60 g powdered sugar
- 70 g unsalted butter
- 1 tbsp milk
- 1 tsp cardamom
- 1/4 tsp grounded saffron
- 1 tbsp poppy seeds
To prepare these rice flour cookies, first grind the cardamom with an electric spice grinder or with a mortar and pestle. Then leave the butter in the microwave for 30 seconds until it is soft.
Now in a large bowl, add the rice flour, powdered sugar, melted butter, milk, and rose water. In the same bowl, first, sift the grounded cardamom and then add it to the ingredients. Now with a spatula stir all the ingredients until they are well combined. In a separate bowl beat the egg yolk for about 3 minutes and then add it to the rest of the ingredients and stir it to combine completely with the mixture. Then leave the batter in the refrigerator for 30 minutes.
After 30 minutes, take the batter out from the refrigerator. Then shape the batter into 3 cm balls and place them about 3 cm apart on a cookie pan covered with parchment paper. Then gently with your finger press and shape the batter balls into 1 cm thick flat cookies. Now dissolve the grounded saffron in 1 tablespoon of boiling water and then brush the mixture over the cookies. After that, garnish them with poppy seeds.
Then bake the cookies in preheated oven to 160 ºC for 20 minutes.
