Ingredients for Fresh Fruit Cake

  • 150 g flour
  • 160 g sugar
  • 4 eggs
  • 120 g unsalted butter
  • 1 tbsp cornflour
  • 1 tbsp lemon zest
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 baking soda
  • 80 ml boiling water
  • 180 ml heavy cream
  • 3 tbsp powdered sugar
  • 1 kiwi
  • 200 g strawberries
  • 200 g blackberries

To prepare this cake, line a 23 cmx20 cm cake pan with parchment paper and set aside. Then crack the eggs into a large bowl and beat them with an electric hand mixer on a medium speed until they become thick and fluffy. After that, add the sugar to the eggs gradually spoon by spoon, beating for 1 minute after each addition to allow the sugar to dissolve.

Next, sift the flour, cornflour, baking powder, salt, and baking soda together three times. Then gently fold the sifted flour mixture into the egg mixture using a silicone spatula until all ingredients are just combined and making sure that all the flour pockets are gone.

Now in a little bowl, dissolve the butter in boiling water and then add it with the lemon zest to the cake batter and fold in using the silicone spatula.

Then pour the cake batter into the lined cake pan and bake it in preheated oven to 180 ª C for 30 minutes until a toothpick inserted in the center comes out clean. As soon as the cake is ready, remove it from the pan and allow to cool completely before decorating.

Meanwhile, whisk the heavy cream with 2 tablespoons of powdered sugar on high speed for about 2 minutes until stiff peaks form. Then cut the strawberries in half and peel and slice the kiwi.

Assembling the cake

Firts cut the cake into 8 equal parts. Then add 1 tablespoon of whipped cream on top of each cake part. After that, add the prepared fruits and to finish, sprinkle the rest of the powdered sugar on top of them. Your fresh fruit cake is ready to serve.

Note: In order to make perfect whipped cream put your mixing bowl and whisk in the freezer for 20 minutes. Also, make sure that your whipping cream is as cold as possible.
