Fruit Tart

Fruit tart with its crunchy pastry crust, rich pastry cream, and tasty fresh fruits is absolutely delicious and perfect for any occasion.

Ingredients for Fruit Tart

For pastry crust:

  • 250 g flour
  • 115 g unsalted butter
  • 3 tbsp sugar
  • 1 egg
  • 1/4 tsp salt

For pastry cream:

  • 35 g flour
  • 3 eggs
  • 3 tbsp sugar
  • 1 tbsp cornstarch
  • 250 ml milk

For fruit topping:

  • 3 figs
  • 1 kiwi
  • 1 peach
  • 100 g blueberries
  • 3 tbsp blueberry marmalade

To prepare this fruit tart, we make the tart crust first. It is important that the butter is cold, so either cut the butter with a knife into small pieces or grate it. Then in a large bowl combine the unsalted butter with sugar and mix them with an electric hand mixer. After that, add the egg to the bowl and continue to whisk until the ingredients are fully incorporated. Next, add the flour and salt and whisk just until the ingredients are combined. Now use a silicon spatula and mix the ingredients until it forms into a homogeneous dough. Then cover the bowl with plastic wrap and place it in the refrigerator for 30 minutes.

Preparing the pastry cream

Meanwhile, we prepare the pastry cream. Therefore, in a bowl, separate the egg yolks from the egg whites. Then beat the egg yolks and sugar with the electric hand mixer until they are stiff and paler in color. After that, add the milk to the mixture and continue whisking until the ingredients are combined. Finally, add the flour and cornstarch to the rest of the ingredients and whisk until completely combined. Now pour the prepared mixture into a saucepan over medium heat and keep stirring the mixture. As soon as the pastry cream begins to thicken, turn off the heat and transfer it to a shallow bowl. Let the cream cool, then cover it with plastic wrap so a skin doesn’t form while it cools, and leave it in the refrigerator.

Next, rub some butter all over the surface of a 25 cm round tart pan. Now take the tart dough out of the fridge and place it in the pan. Use your fingers to spread the dough evenly across the pan. Then cover it with plastic wrap and place it in the refrigerator for 15 minutes more.

Meanwhile, peel and slice the kiwi and peach and cut the figs in half.

After 15 minutes, take the tart pan out of the fridge, remove the plastic wrap and use a fork to poke holes halfway into the dough. And then bake the dough in the preheated oven to 180 ºC for 35 minutes until it is lightly golden.

Assembling the Fruit Tart

When the tart is cool, you can assemble the fruit tart. First, remove it from the pan and then use a kitchen brush to brush the surface of the crust with blueberry marmalade. Then add the prepared pastry cream and spread it evenly with a spoon. Now place the prepared fruits on top of the pastry cream and leave the tart in the fridge for a few minutes. By doing this, the pastry cream will hold the fruits in place and then you can serve the fruit tart.

Notes: When preparing the pastry crust, the butter must be cold. Also, you can add vanilla extract or lemon zest to the pastry cream.
