Ingredients for Fruit Tart

For pastry crust:

  • 250 g flour
  • 115 g unsalted butter
  • 3 tbsp sugar
  • 1 egg
  • 1/4 tsp salt

For pastry cream:

  • 35 g flour
  • 3 eggs
  • 3 cucharadas de azúcar
  • 1 cucharada de maicena
  • 250 ml leche

For fruit topping:

  • 3 figs
  • 1 kiwi
  • 1 peach
  • 100 g blueberries
  • 3 tbsp blueberry marmalade

Instructions for Fruit Tart

To prepare this fruit tart, first we prepare the tart crust. It is important that the butter is cold, so either cut the butter into small pieces with a knife or grate it first. Then in a large bowl combine the unsalted butter with sugar and mix them with an electric hand mixer. After that, add the egg to the bowl and continue to whisk until the ingredients are completely mixed. Then add the flour and salt and whisk just until the ingredients are combined. Now use a silicon spatula and mix the ingredients until it forms into a homogeneous dough. Then cover the bowl with plastic wrap and place it in the refrigerator for 30 minutes.

Preparing the pastry cream

Meanwhile, we prepare the pastry cream. In a bowl, first separate the egg yolks from the egg whites. Then beat the egg yolks and sugar with the electric hand mixer until they are stiff and paler in color. After that, add the milk to the mixture and continue whisking until the ingredients are combined. Finally add the flour and cornstarch to the rest of the ingredients and whisk them until well combined. Now pour the prepared mixture into a saucepan over medium heat and keep stirring the mixture and bring it to boil or just until it starts to thicken. Then turn off the heat and transfer it to a shallow bowl. Let the cream cool down and cover it with plastic wrap so a skin doesn’t form while it cools and leaves it in the fridge.

Next, rub a little bit of butter all over the surface of a tart pan of 25 cm. Now remove the tart dough from the fridge and place it into the pan. Use your fingers to spread the dough evenly across the pan. Then cover it with plastic wrap and place it in the refrigerator for 15 minutes more.

Meanwhile, cut the figs in half and then peel and slice the kiwi and peach.

After 15 minutes, take the tart pan out from the fridge, remove the plastic wrap and use a fork to poke holes halfway into the dough. And bake the dough in a preheated oven to 180 ºC for 35 minutes until it is lightly golden.

Assembling the fruit tart

After that the tart is cool, you can assemble the fruit tart, first remove it from the pan and then brush it with blueberry marmalade. Then place the prepared pastry cream on top of it and with a spoon spread it evenly. Now place the prepared fruits on top of the tart and leave it in the fridge for a few minutes so the pastry cream holds the fruits in place and then serve it.
