Ingredients for:
Lemon Bars

For the crust:

  • 200 g all-purpose flour
  • 120 g sugar
  • 100 g unsalted butter

For the filling:

  • 120 g sugar
  • 50 ml lemon juice
  • 3 eggs
  • 2 tbsp lemon zest
  • 50 g all-purpose flour
  • 20 g powdered sugar

Instructiones for lemon bars

In order to make the lemon bars, first we prepare the crust.Therefore, in a bowl mix the flour with sugar and butter with an electric hand mixer. Then in a 24 cm baking pan, put a parchment paper and pour the mixture in the pan. Now press firmly the mixture and shape it with your hands. You can also use a rectangular pan but it is important that the thickness of the crust is 1 cm. Then bake the crust in preheated oven to 180 ºC for 20 minutes.

Meanwhile we prepare the filling. For that, with the electric hand mixer, in a bowl mix the sugar with the lemon juice, lemon zest, flour and eggs for 3 minutes. And as soon as the crust is ready, pour the filling mixture evenly all over it and bake it again in the oven at 180 ºC for 20 minutes more.

Finally when the lemon bars are cool cut them in rectangular bars and garnish with powdered sugar.
