Ingredients for Lemon Cookies

  • 200 g flour
  • 115 g unsalted butter
  • 200 g sugar
  • 1 egg
  • 1/2 tsp baking powder
  • 1 tbsp lemon zest
  • 70 g icing sugar
  • 1/4 tsp ground saffron
  • Salt


To prepare these lemon cookies, first, dissolve the ground saffron in 1 tablespoon of boiling water and then let it cool. After that, in a bowl, mix the softened butter with sugar until it is light and fluffy. Then add the egg, lemon zest, and saffron to the butter and mix again. Now add the flour, a pinch of salt, and baking powder in two batches to the rest of the ingredients and mix them until just combined. Then cover the bowl with plastic wrap and place it in the fridge for one hour.

Next, preheat the oven to 180 ºC and then line a cookie sheet with parchment paper. Then pour the icing sugar in a bowl and by hand, roll a heaping teaspoon of chilled dough into a ball and then roll it in icing sugar. Place the ball on the prepared cookie sheet and repeat with the remaining dough. These lemon cookies will expand while cooking in the oven, so place them with enough space between them.

Now bake the cookies for 20 minutes until their bottoms are barely brown. After 20 minutes remove the lemon cookies from the oven and wait about 3 minutes before transferring them to a cooling rack.
