Ingredients for Strawberry and Blueberry cake

For the cake sponge:

  • 225 g all-purpose flour
  • 275 g sugar
  • 125 g butter
  • 3 eggs
  • 1 tbsp orange zest
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 125 ml milk

For the cake filling:

  • 400 ml whipping cream
  • 3 tbsp powdered sugar
  • 200 g strawberries
  • 150 g blueberries

Instructions for Strawberry and Blueberry cake

To make this strawberry and blueberry cake, first, preheat the oven to 160 ºC. Then grease a deep round cake pan of 20 cm and set it aside.

Now to prepare the sponge, it is important that the butter, eggs, and milk are at room temperature. Then in a medium bowl sift the flour, baking powder, baking soda, and salt. After that in a mixer bowl fitted with the whisk attachment, whisk together butter, eggs, orange zest, milk, and sugar on high speed until pale, about 5 minutes. Then at low speed, add the sifted dry ingredients to the bowl with wet ingredients and mix just until combined. Most importantly, do not over mix it.

Pour the batter into the prepared pan and bake for 70 minutes. Then allow the cake sponge to cool completely on a wire rack and after that cut it in half.

Now in order to make perfect whipped cream, put your mixing bowl and whisk in the freezer for 20 minutes. And also make sure that your whipping cream is as cold as possible. Then pour the whipping cream and 2 tbsp of powdered sugar into your mixing bowl and whisk together on high speed for about 2 minutes until stiff peaks form.

Finally, after cutting the strawberries in half, you can finish your cake by covering the cake layers with whipped cream, strawberries, and blueberries. And then sprinkle the rest of the powdered sugar on top of the cake.

Note: In order to make perfect whipped cream put your mixing bowl and whisk in the freezer for 20 minutes. Also, make sure that your whipping cream is as cold as possible.
