Strawberry tart with pomegranate has a perfect crust and very delicious fruit toppings. This mouthwatering dessert is ideal for any occasion.

Ingredients for Strawberry Tart
For pastry crust:
- 250 g flour
- 115 g unsalted butter
- 3 tbsp sugar
- 1 egg
- 1/4 tsp salt
For pastry cream:
- 35 g flour
- 3 eggs
- 3 tbsp sugar
- 1 tbsp cornstarch
- 250 ml milk
For fruit topping:
- 200 g strawberries
- 1 pomegranate
- 3 tbsp strawberry marmalade

Instructions
To prepare strawberry tart, we prepare the tart crust first. It is important that the butter is cold, so either cut the butter with a knife into small pieces or grate it. Next, in a large bowl combine the unsalted butter with sugar and mix them with an electric hand mixer. After that, add the egg to the bowl and continue beating until the ingredients are completely incorporated. Then add the flour and salt and beat them until the ingredients are combined. Now with a silicone spatula mix the ingredients until it forms into a homogeneous dough. Then cover the bowl with plastic wrap and place it in the refrigerator for 30 minutes to cool.
Preparing the pastry cream
Meanwhile, we prepare the pastry cream for the strawberry tart. In a bowl, separate the egg yolks from the egg whites. Then beat the egg yolks and sugar with the electric hand mixer until they are stiff and paler in color. After that, add the milk to the mixture and continue whisking until the ingredients are combined. Finally, add the flour and cornstarch to the rest of the ingredients and beat them until well combined. Now pour the prepared mixture into a saucepan and place it over medium heat. Keep stirring the mixture until bringing it to a boil or just until it starts to thicken. Then turn off the heat and transfer the pastry cream to a shallow bowl. Let the pastry cream cool, then cover it with plastic wrap so a skin does not form while it cools and leave it in the fridge.
Next, rub with butter all over the surface of a tart pan of 25 cm. After that, remove the tart dough from the fridge and put it in the pan. Use your fingers to spread the dough evenly across the pan. Then cover it with plastic wrap and place it in the refrigerator for 15 minutes more.
Meanwhile, cut the strawberries in half and seed the pomegranate.

After 15 minutes, take the tart pan out from the fridge, remove the plastic wrap and use a fork to poke holes halfway into the dough. It is time to bake the dough in the preheated oven to 180 ºC for 35 minutes until it is lightly golden.

Assembling the strawberry tart
After the tart crust is cool, you can assemble the strawberry tart. First, remove the crust from the pan and then brush the surface of it with the strawberry marmalade. Then add the prepared pastry cream to the tart crust and spread it evenly with a spoon. Now place the prepared fruits on top of the pastry cream and then leave it in the fridge for a few minutes so it holds the fruits in place. After that, your strawberry tart is ready to serve.
