Cashew Stew recipe

Ingredients for:
Cashew Stew

  • 100 g raw cashews
  • 150 g mushrooms
  • 1 spring onion
  • 1 cubanelle pepper
  • 125 g greek yogurt
  • 1 tbsp curry powder
  • 4 tbsp olive oil
  • 200 ml water
  • Salt & pepper

Instructions for: Cashew Stew

To prepare this stew, first chop the spring onion, then slice the mushrooms and cut the cubanelle pepper into strips.

After that, in a pot over high heat, warm the olive oil and then add the chopped spring onion to it. When the onion is slightly golden, add the cubanelle pepper and sauté for 2 minutes. Next, add the mushrooms and sauté for 2 minutes as well. Then add the cashews, curry powder, salt and pepper to the rest of the ingredients and after 2 minutes add the water to the stew. When the stew starts to boil, lower the heat to minimum, cover the pot and let simmer for 20 minutes.

After 20 minutes, remove the pot from heat, add the greek yogurt to the cashew stew and then serve it.

Tip: you can serve this stew with basmati rice or with bread.
