Cashew Stew is made with mushrooms, spring onion, cubanelle pepper, Greek yogurt, and curry. You can make this tasty stew in 30 minutes.

Ingredients for Cashew Stew

  • 100 g raw cashews
  • 150 g mushrooms
  • 1 spring onion
  • 1 cubanelle pepper
  • 125 g Greek yogurt
  • 1 tbsp curry powder
  • 4 tbsp olive oil
  • 200 ml water
  • Salt & pepper

To prepare this tasty stew, chop the spring onion first. Then slice the mushrooms and cut the cubanelle pepper into thin strips.

After that, place a pot over high heat and add the olive oil. When the oil is warm, add the spring onion. When the onion is slightly golden, add the cubanelle pepper and sauté for 2 minutes. Next, add the mushrooms to the ingredients and sauté for 2 minutes as well. Then add the cashews, curry powder, salt, and pepper to the rest of the ingredients and after 2 minutes add the water to the stew. As soon as the stew comes to a boil, lower the heat to a minimum, cover the pot and let the stew simmer for 20 minutes.

After 20 minutes, remove the pot from the heat and add the Greek yogurt to the Cashew Stew and mix well. Finally, your stew is ready to serve.

Notes: You can serve Cashew Stew with basmati rice or any long-grain white rice, or with bread. Also, it is important to add the yogurt to the stew after removing it from the heat, because we don’t want the yogurt to boil.
