Celery Stew

Celery Stew is a tasty vegan dish made with fresh herbs, kidney beans, and spices like turmeric, and is perfect both for lunch or dinner.

Ingredients for:
Celery Stew

For the stew:

  • A bunch of celery
  • 25 g parsley
  • 25 g fresh Mint
  • 50 g red kidney beans
  • 1 onion
  • 1 lemon
  • 4 tbsp olive oil
  • 1 tsp turmeric
  • Salt & pepper

For the Rice:

  • 200 g Basmati rice
  • 1 potato
  • 2 tbsp olive oil
  • 1 tbsp salt


For the Stew: First, soak the kidney beans for 12 hours. Then cook them and drain them. After that, cut the onion into small pieces. Meanwhile, finely chop the celery, parsley, and also fresh mint.

Now put a pot over high heat and add 4 tablespoons of olive oil and start frying the onion. When the onion is translucent, add the chopped celery, parsley, fresh mint, and kidney beans. Continue stirring all the ingredients for about 2 minutes. Then add the salt, pepper, and turmeric to the pot. And after 5 minutes, add 2 cups of water to the stew and cover the pot. As soon as the stew comes to a boil, lower the heat to medium and simmer for 30 minutes. Finally, when the stew is ready, remove it from the heat and add the lemon juice.

For the rice: First, add
2 tablespoons of olive oil to a rice cooker. Then peel and slice the potato. After that, place the sliced potato in the bottom of the rice cooker so that it is completely covered by the sliced potato. Next, wash the rice 2-3 times until the water runs clear. Now add the rice with salt and 2 cups of water to the rice cooker.And when the rice is ready, you can serve it with the celery stew.

Note: It is important to soak the red kidney beans for 12 hours, this will reduce the cooking time.
