Ingredients for:
Celery Stew

For the stew:

  • A bunch of Celery
  • 25 g Parsley
  • 25 g Fresh Mint
  • 50 g Red kidney beans
  • 1 Onion
  • 1 Lemon
  • 4 tbsp Olive oil
  • 1 tsp Turmeric
  • Salt & pepper

For the Rice:

  • 200 g Basmati rice
  • 1 Potato
  • 2 tbsp Olive oil
  • 1 tbsp Salt

Instructions

For the Stew: to prepare the celery stew, first soak the kidney beans during 12 hours. Then cook the kidney beans and drain them. After that, cut the onion in small pieces. Meanwhile, chop the celery, parsley and also fresh mint finely.

Now in a pot over high heat add 4 tbsp of olive oil and start to fry the onion. When the onion is translucent, add the chopped celery, parsley, fresh mint, and the kidney beans to it. Continue stirring during 2 minutes. Then add the salt, pepper, and turmeric to the mix. After 5 minutes, add 2 cups of water to the stew and cover the pot. Then lower the heat to medium and cook the celery stew during 30 minutes. Finally when the stew is ready, add the lemon juice to it.


For the Rice: first peel and
slice the potato. Then in a rice cooker add 2 tbsp of olive oil. First put the sliced potato at the bottom of the pot in a way that is completely covered by the potato. Then wash the rice 2 or 3 times and add it to the rice cooker. After that, also add the salt, olive oil, and 2 cups of water to the rice and let it cook.

Tip: you can serve this stew with rice or with bread. This celery stew is perfect both for lunch or for dinner.
