Ingredientes for:

  • 250 g chickpeas
  • 2 red onions
  • 1 carrot
  • 100 g coriander
  • 1 celery stalk
  • 4 Cherry tomatoes
  • 2 radishes
  • Microgreen leaves
  • Olive Oil
  • Salt & pepper

In order to make Falafel, you must soak the chickpeas in water for 2 days, and change the water every day. Because we do not cook the chickpeas, after 2 days they will be soft by absorbing the water. Then rinse and drain them and dry them completely with paper towels. Next, pour the chickpeas into a food processor and then add 1 onion, carrot, celery stalk, and 100 grams of coriander to them. Now process all the ingredients together until the mixture is like a homogeneous paste. Then add the salt and pepper to the paste and mix them together.

After that, place a small and deep pot or frying pan over high heat and add the olive oil. When the oil is hot, by using two spoons, press and shape the paste into small ovals and then deep fry them until they are golden brown.

When the Falafels are ready, you can serve them on pita bread accompanied with microgreen leaves and 1 onion, 2 radishes, and 4 cherry tomatoes all chopped in very thin slices.

Note: Make sure the oil is very hot before frying the Falafels.
