Mixed Vegetable Stir-Fry is a flavorful sweet and sour dish made with green beans, fava beans, carrots, cashews, mushrooms, and bell peppers.

Ingredients for Mixed Vegetable Stir-Fry
- 100 g green Romano beans
- 200 g fava beans
- 2 carrots
- 50 g raw cashews
- 4 mushrooms
- 50 g cooked corn kernels
- 1 garlic clove
- 1/2 red bell pepper
- 1/2 Cubanelle pepper
- 1 tbsp brown sugar
- 4 tbsp olive oil
- 1 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp sesame seeds
Instructions

To prepare this Mixed Vegetable Stir-Fry dish, wash and dry all the vegetables first. Then trim both ends of green Romano beans. Next, peel the carrots and fava beans. After that, cut the green beans, carrots, red bell pepper, and Cubanelle pepper into strips. Then slice the mushrooms and mince the garlic clove.
Next, in a wok or skillet over medium-high heat, add the olive oil. When the olive oil is warm, add the prepared green beans, carrots, red bell pepper, and green pepper and sauté for about 3 minutes until they are tender. Then add the mushrooms, fava beans, minced garlic, cashews, corn kernels, brown sugar, rice vinegar, and soy sauce to the rest of the ingredients. Toss to coat and mix all the ingredients and let them simmer for about 5 minutes. Then remove the wok from heat and add the sesame seeds to the stir-fry vegetables. Now your dish is ready to serve.
Note: It is perfect to serve this sweet and sour Mixed Vegetable Stir-Fry with white rice. Enjoy!
