Ingredients for:
Mixed Vegetable Stir-Fry

  • 100 g green Romano beans
  • 200 g fava beans
  • 2 carrots
  • 50 g raw cashews
  • 4 mushrooms
  • 50 g cooked corn kernels
  • 1 garlic clove
  • 1/2 red bell pepper
  • 1/2 Cubanelle pepper
  • 1 tbsp brown sugar
  • 4 tbsp olive oil
  • 1 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame seeds

Instructions for mixed vegetable stir-fry

To prepare this mixed vegetable stir-fry, first wash all the vegetables. Then trim both ends of green Romano beans. Next, peel the carrots and fava beans. After that, cut the green beans, carrots, red bell pepper and Cubanelle pepper into strips. Then slice the mushrooms and mince the garlic clove.

Now in a wok or skillet over medium-high heat, add the olive oil. When the olive oil is warm, add the green beans, carrots, red pepper and green pepper and cook them for about 3 minutes until they are tender. Then add the mushrooms, fava beans, minced garlic, cashews, corn kernels, brown sugar, rice vinegar and soy sauce to the rest of the ingredients. Toss to coat and mix all ingredients and let them simmer for about 5 minutes. Remove the wok from heat, add the sesame seeds to the stir-fry vegetables and serve it.

It is perfect to serve this sweet and sour mixed vegetable stir-fry with white rice. Enjoy!
