Ingredients for:
Rice with green beans ( lubiyapolo)

  • 250 g Basmati rice
  • 200 g Green beans
  • 1 Onion
  • 8 tbsp Olive oil Tomato
  • 1 Lemon
  • 2 tbsp Tomato paste
  • 1 Tomato tbsp Olive oil
  • 1/2 tbsp Turmeric
  • Salt


To make this rice with green beans (Lubiyapolo), first soak the rice for an hour. Then wash and slice the green beans. After that, chop the onion and also tomato.

Now in a pot over high heat, fry the onion with 4 tbsp olive oil until it is gold. Then add the green beans to the onion. Continue frying the green beans during 5 minutes. Now add the salt, turmeric, tomato, and tomato paste to the green beans. Meanwhile, mix thoroughly the ingredients. Then add a cup of water to it and cook for 15 minutes over medium heat. In the end, add the lemon juice to the mix.

Then fill a pot with water and when the water starts to boil, add the rice with a tbsp of salt to it. As soon as the rice is half tender and not thoroughly cooked drain it in a colander. After that, at the bottom of a large pot pour 4 tbsp of olive oil and add one layer rice and one layer of the green beans mixture. Then again one layer rice and one layer of the green beans mixture. Finally cover the pot and cook the rice for 40 minutes over very low heat.
