Rice with green beans (Lubia polo) is a delicious vegetarian dish made with basmati rice, green beans, onions, tomatoes, and turmeric.

Ingredients for Rice with green beans (Lubia polo)
- 250 g basmati rice
- 200 g green beans
- 1 onion
- 8 tbsp olive oil
- 2 tomatoes
- 1 lemon
- 2 tbsp tomato paste
- 1/2 tbsp turmeric
To make this rice with green beans (Lubia polo) soak the rice with a pinch of salt for an hour. Then wash and trim both ends of the green beans and cut them into 1 cm long pieces. After that, peel and chop the onion. Also, cut the tomatoes into small pieces.
Next, in a pot over high heat, fry the onion with 4 tablespoons of olive oil until it is golden. Then add the green beans to the onion and continue frying the green beans for 5 minutes. After that, add the salt, turmeric, chopped tomatoes, and tomato paste to the green beans. Meanwhile, mix thoroughly the ingredients. Then add a cup of water to the mixture and cook the green beans mixture for 15 minutes over medium heat. After that, remove the pot from the heat and add the lemon juice.
Then fill a large pot with water and when the water starts to boil, add the rice with a tablespoon of salt to it. As soon as the rice is medium tender and not thoroughly cooked, after about 3 minutes, drain it in a colander. After that, add 4 tablespoons of olive oil to a large, shallow non-stick pot, and then add one layer of rice to the pot so that it covers the bottom of the pot completely. Then add one layer of the green beans mixture on top of it. Then again, add one layer of rice and one layer of the green beans mixture. Finally, cover the pot and cook the rice over low heat for 40 minutes. When the Lubia polo is done, place a large plate on top of the pot, flip it over, and serve.
