Shiitake mushrooms

Shiitake mushrooms have been utilized for their health benefits in traditional Asian healing systems for centuries. They are high in minerals such as selenium and may have anti-inflammatory properties. These mushrooms are low in fat and calories and are cholesterol-free. Shiitake mushrooms are a good source of fiber, and also can provide us with vitamins A, B2, B12, C and D. They also contain minerals like magnesium, potassium and zinc. Their rich, earthy flavor and meaty texture make them perfect for sautés, stir-fries, soups, stuffings and risotto.
