Ingredients for Spaghetti with Fennel

Spaghetti with Fennel recipe
  • 250 g whole-wheat spaghetti
  • 1 small fennel bulb
  • 100 g mushrooms
  • 2 zucchini
  • 1 onion
  • 200 g tomato sauce
  • 4 tbsp olive oil
  • 2 tbsp cheese powder
  • Salt & pepper

To prepare Spaghetti with Fennel first, cut the fennel into thin slices with a mandoline or a knife. Then cut the mushrooms in half, chop the onion, and cut the zucchini into thick strips.

After that, in a large skillet or a wok over medium-high heat, warm the olive oil and then add the chopped onion. When the onion is translucent, add the mushrooms and cook them for about 3 minutes. Then add the zucchini strips and sauté for 3 minutes more. Next, add the fennel, salt, and pepper and after 3 minutes add the tomato sauce with 200 ml of water. Then lower the heat to medium-low and simmer the sauce for 10 minutes until it thickened.

Meanwhile, cook the whole-wheat spaghetti in boiling water with a pinch of salt according to packet instructions (it is better to cook the spaghetti al dente) and then drain it in a colander. Then add the cooked spaghetti to the prepared vegetable sauce and mix them. Now Spaghetti with Fennel is ready to be served with cheese powder on top.

Note: Whole-wheat spaghetti or in general whole-wheat pasta is healthier than white or refined pasta because it boosts our energy levels and fights fatigue. In addition, it helps to keep us full for a longer period of time.
