Spaghetti with Fennel is flavorful and very easy to make and the spaghetti in this recipe is made with whole-wheat, which makes it healthier.

Ingredients for Spaghetti with Fennel
- 250 g whole-wheat spaghetti
- 1 small fennel bulb
- 100 g mushrooms
- 2 zucchini
- 1 onion
- 200 g tomato sauce
- 4 tbsp olive oil
- 2 tbsp cheese powder
- Salt & pepper
Instructions
To prepare Spaghetti with Fennel first, cut the fennel into thin slices with a mandoline or a knife. Then cut the mushrooms in half, chop the onion, and cut the zucchini into thick strips.
After that, in a large skillet or a wok over medium-high heat, warm the olive oil and then add the chopped onion. When the onion is translucent, add the mushrooms and cook them for about 3 minutes. Then add the zucchini strips and sauté for 3 minutes more. Next, add the fennel, salt, and pepper and after 3 minutes add the tomato sauce with 200 ml of water. Then lower the heat to medium-low and simmer the sauce for 10 minutes until it thickened.
Meanwhile, cook the whole-wheat spaghetti in boiling water with a pinch of salt according to packet instructions (it is better to cook the spaghetti al dente) and then drain it in a colander. Then add the cooked spaghetti to the prepared vegetable sauce and mix them. Now Spaghetti with Fennel is ready to be served with cheese powder on top.
