Stuffed Cabbage Rolls

Stuffed Cabbage Rolls are made with fresh herbs, mushrooms, yellow split peas, and spices; this combination makes them absolutely delicious.

Ingredients for Stuffed Cabbage Rolls

  • 1 head green or white cabbage
  • 100 g Basmati rice
  • 100 g yellow split peas
  • 300 g tomato sauce
  • 100 g mushrooms
  • 25 g dill
  • 25 g coriander
  • 1 onion
  • 25 g parsley
  • 2 garlic cloves
  • 1 tsp turmeric
  • 3 tbsp olive oil
  • Salt & pepper

With a small, sharp knife, cut in a circle the stem of the cabbage and remove it. After that, cook the cabbage in boiling water for about 5 minutes and then drain it. This way, you can easily remove the cabbage leaves without breaking them.

Cook the rice in boiling water with a pinch of salt until it is semi-cooked and then drain it. Because the rest of the cooking will happen in the oven.

Cook the yellow split peas in boiling water for 20 minutes and then drain them.


Next, finely chop the coriander, parsley, and dill.


After that, chop the onion, cut the mushrooms into small pieces, and mince the garlic as well.

Then place a skillet or frying pan over medium-high heat and add the olive oil to it. When the olive oil is warm, add the onion. When the onion is translucent, add the mushrooms, minced garlic, salt, and pepper and sauté for about 3 minutes.

Now carefully separate 8 leaves from the cabbage. Then using a sharp knife, cut a small V-shaped notch to remove the thick part of the cabbage rib.


Next, in a large bowl mix the rice with yellow split peas, chopped herbs, fried onion and mushrooms mixture, turmeric, salt, and pepper.

For the tomato sauce:

In a bowl, mix the tomato sauce with 100 ml of water and pepper.

Assembling the Stuffed Cabbage Rolls

Add 2 tablespoons of the prepared rice mixture to the center of each cabbage leaf. Fold the bottom edge over the mixture and then fold the sides over and roll into a tidy packet. Now transfer the cabbage rolls to a baking dish by placing their seam side down. Then pour the tomato sauce mixture over the Stuffed Cabbage Rolls and bake them in the preheated oven to 200 ºC for 40 minutes.

Note: You can serve the Stuffed Cabbage Rolls with sour cream, Greek yogurt, or fresh chopped dill.
