Quail’s Nest

Quail’s Nest is a tasty and colorful vegetarian dish made with black spaghetti, microgreen leaves, broccoli, carrot, celery, and quail eggs.

Ingredients for:

  • 150 g black spaghetti
  • 6 Quail’s eggs
  • 1 small red onion
  • 10 Cherry Tomatoes
  • Microgreen leaves
  • 50 g broccoli
  • 1 carrot
  • 1 celery stalk
  • 2 red radishes
  • Olive Oil
  • Salt & pepper


To prepare Quail’s Nest, cook the quail eggs in boiling water for 10 minutes, then peel them. Then with a kitchen mandoline, cut the onion, carrot, celery stalk, and red radishes into very thin slices. Also, with a knife, cut the broccoli into small pieces and the cherry tomatoes into quarters.

Meanwhile, cook the black spaghetti in boiling water with a pinch of salt according to the package directions, for about 10 minutes. And when the spaghetti is cooked, add a little olive oil to it and mix well. After that, when the spaghetti is slightly cool, you can set the plate in a deep dish. First, put the spaghetti on the plate and then the cherry tomatoes. Next, add the finely chopped vegetables and also the microgreen leaves. Now place the quail eggs on top of all the ingredients. Finally, after adding the salt, pepper, and olive oil your dish is ready to serve. Enjoy!
