Ingredients for:
Tofu with Vegetables

  • 200 g tofu
  • 150 g broccoli
  • 80 g mushrooms
  • 1 onion
  • 1 garlic clove
  • 2 tsp sesame seeds
  • 1 tbsp brown sugar
  • 3 tbsp olive oil
  • 3 tbsp soy sauce
  • 1 tsp black pepper
  • 1 tbsp rice vinegar

Instructions

To prepare this meal, first we should drain the tofu really well because it contains a lot of water. For that, lay some kitchen paper towels on a plate and place the tofu on top of the paper towels. Then cover the tofu with another layer of paper towels on top. Now place another plate on top of the tofu with something heavy in it. Let the tofu drain for 15 minutes, this way its excess water will be pressed out into the paper towels.

Meanwhile, slice the onion finely, cut the mushrooms in half, mince the garlic and seperate the little florets of broccoli by hand. And once the tofu has drained, cut it into thick strips or any other shape or size that you prefer.

Next, in a bowl mix the minced garlic with brown sugar, olive oil, rice vinegar, soy sauce and black pepper.

After that, transfer the tofu and the rest of the prepared vegetables into an oven tray and spread them evenly. Then add the soy sauce mixture on top of the ingredients and bake them in the preheated oven to 200 ºC for 20 minutes until the tofu is crispy outside. You can serve tofu with vegetables, with white rice and sesame seeds on top.

Note:

Soy sauce has enough salt in it, that is why we don’t add more salt to this recipe. Also, instead of rice vinegar, you can use white wine or apple cider vinegar.
