Tortellini with Mushrooms

Tortellini with Mushrooms is a very tasty and easy vegetarian dish made with green peas, red bell pepper, cherry tomatoes, and mushrooms.

Ingredients for Tortellini with Mushrooms

  • 250 g tortellini
  • 150 g mushrooms
  • 100 g green peas
  • 1 red bell pepper
  • 8 cherry tomatoes
  • 100 g tomato sauce
  • 1 garlic clove
  • 3 tbsp olive oil
  • Salt and pepper


Tortellini with Mushrooms recipe

To prepare tortellini with mushrooms, wash and then cut the mushrooms in half. Then cut the red bell pepper into squares and cherry tomatoes in half. Next, mince the garlic.

After that, cook the green peas in boiling water for about 3 minutes and then drain them. Also, cook the tortellini in boiling water according to packet instructions ( for 6-7 minutes) and then drain it.

Next, in a wok or a large skillet over medium-high heat, warm the olive oil. Then add the minced garlic and when the garlic is lightly golden, add the red bell pepper with salt and pepper and sauté for just 1 minute. Then add the mushrooms and cook the ingredients for 1 minute more. After that, add the cherry tomatoes, tomato sauce, and a cup of water to the ingredients, lower the heat to medium-low and simmer for 10 minutes until the sauce thickens.

When the sauce is done, remove the wok from the heat, add the prepared green peas and tortellini to the ingredients and mix them together. Now your Tortellini with Mushrooms is ready to serve.

Note: If you prefer, instead of green peas, you can use corn kernels in this recipe.
