Tortellini with vegetables is made with broccoli, spinach, bell pepper, and mushrooms. This healthy recipe is perfect for lunch or dinner.

Ingredients for Tortellini with Vegetables
- 250 g tortellini
- 150 g oyster mushrooms
- 100 g spinach
- 250 g broccoli
- 1/2 green bell pepper
- 5 tbsp tomato sauce
- 4 tbsp olive oil
- Salt & pepper
Instructions

We begin by making the vegetable sauce first,
in order to prepare this tortellini with vegetables.
Therefore, with a knife cut the green bell pepper into thin strips.
Then cut the large stem of the broccoli and after peeling it, chop it finely.
Next, try to separate the little florets of broccoli carefully by hand.
Then wash and clean the oyster mushrooms as well.
After that, put a saucepan over high heat and add the olive oil.
When the olive oil is warm,
add the green bell pepper strips and chopped stems of broccoli to the oil and sauté them for about 2 minutes.
Then add the oyster mushrooms, salt, and pepper and sauté again for 2 minutes.
Next, add the broccoli florets and spinach and continue frying all the ingredients together for 2 minutes more.
Finally, it is time to add the tomato sauce to the rest of the ingredients and mix them well.
After 1 minute, you can remove the saucepan from the heat.
Then fill a large pot with water and place it over high heat.
When the water begins to boil,
add the tortellini and a pinch of salt and cook it as directed on the package ( between 12-14 minutes, however,
it is better that you cook the tortellini al dente), and then drain it.
Now your tortellini is ready to be served after mixing it with the prepared vegetable sauce.
