Fajitas with Vegetables

  • 1 green Paprika
  • 8 mushrooms
  • 1 red Paprika
  • A bunch of coriander
  • 1 zucchini
  • 1 avocado
  • 4 Fajita bread
  • 1/2 cup tomato sauce
  • 1/2 tbsp Tex Mex mix
  • 5 tbsp olive oil
  • Salt


In order to make fajitas with vegetables first cut in julienne the zucchini and red and green paprika. Then slice the mushrooms. Meanwhile, wash and chop the coriander finely.

In a saucepan over high heat, add the olive oil and start to fry each ingredient for 5 minutes. First, begin with frying the red and green paprika. After 5 minutes, add the zucchini to the mix. Then add the mushrooms. Now add the salt and Tex Mex mix to the ingredients and fry for 2 minutes more.

Finally, remove the saucepan from the heat and add the chopped coriander to the mix.

Prepare two little bowls, one for the tomato sauce and another one for the mashed avocado. On each fajita, bread put 2 tbsp of the vegetable mix and 1 tsp of the tomato sauce and 1 tsp of the mashed avocado. Fajitas are ready to serve.

Tip: You can fry the fajitas bread in a saucepan, without oil, over medium heat, and then serve them.
