Fajitas with Vegetables

Fajitas with vegetables with avocado and spicy tomato sauce are flavorful and really easy to make. They are perfect for lunch or dinner.

  • 1 green paprika
  • 8 mushrooms
  • 1 red paprika
  • A bunch of coriander
  • 1 zucchini
  • 1 avocado
  • 4 fajita bread
  • 1/2 cup spicy tomato sauce
  • 1/2 tbsp Tex Mex mix
  • 5 tbsp olive oil
  • Salt


In order to make these fajitas with vegetables, wash and then dry all the vegetables first. After that, cut in julienne the zucchini and red and green paprika. Then slice the mushrooms. Meanwhile, chop the coriander finely.

Next, in a saucepan over high heat, add the olive oil. When the olive oil is warm, first add the red and green paprika and fry them until they are soft, about 3 minutes. Then add the zucchini to the mixture and after 3 minutes add the mushrooms. Sauté all the ingredients together for about 5 minutes, then add the salt and Tex Mex mix and fry them for 5 minutes more.

Then remove the saucepan from the heat and add the chopped coriander to the rest of the ingredients and mix them together.

Now mash the avocado with a fork and serve it in a little bowl. Also, serve the spicy tomato sauce in a little bowl. In order to serve the fajitas with vegetables, add 2 or 3 tablespoons of the prepared vegetable mixture to each fajita bread first. Then add 1 teaspoon of the spicy tomato sauce and 1 teaspoon of the mashed avocado to them. After that, your fajitas with vegetables are ready to serve.

Note: You can warm up each fajita bread in a saucepan and without oil over medium heat for a few seconds. Also, you can warm them in the microwave.
