Vegetable frittata is baked in the oven with very little oil. That makes this frittata healthier, easier to prepare, and also very tasty.

Ingredients for:
Vegetable Frittata

  • 200 g organic spring mix
  • 150 g carrots
  • 100 g onions
  • 100 g broccoli
  • 5 tbsp chickpea flour
  • 4 eggs
  • 4 tbsp olive oil
  • Salt & pepper

Instructions

To prepare this vegetable frittata first, mince the spring mix and then pour it into a large bowl. After that, chop the broccoli. Then peel the carrots and onions. Now grate the carrots and onions and then add them to the bowl as well. Next, add the chickpea flour, salt, and pepper to the ingredients in the bowl and mix them with a spoon. Then add the eggs and olive oil to the rest of the ingredients and mix them.

Now grease a square-shaped non-stick oven mold or a pyrex with butter first, and then pour the prepared mixture of vegetable frittata into the mold. After that, use a spoon to smooth the surface of the frittata.

In the meantime, preheat the oven to 180 ºC and then bake the vegetable frittata for 45 minutes. Because all ovens don’t have the same heat intensity, it is better that you check the frittata after 40 minutes. And if it was not cooked yet, leave it in the oven for 5 minutes more. You know that frittata is done when it is slightly golden on top. After removing the frittata from the oven and when it is baked, wait about 5 minutes until it is slightly cool, then remove it from the mold and cut it into 4 pieces. You can serve the vegetable frittata with bread or with a salad.

Note: If you don’t have chickpea flour, you can also use wheat flour.
