Ingredients for:
Vegetables Frittata

  • 200 g organic spring mix
  • 150 g carrots
  • 100 g onions
  • 100 g broccoli
  • 5 tbsp chickpea flour
  • 4 eggs
  • 4 tbsp olive oil
  • Salt & pepper


To prepare this vegetables frittata, first mince the spring mix and then pour it into a large bowl. After that, chop the broccoli, peel and then grate the carrots and onions and add them to the bowl as well. Now add the chickpea flour, salt and pepper to the mixture in the bowl and mix them. Then add the eggs and olive oil to the rest of the ingredients and mix them well.

Then grease a non-stick oven mold or a pyrex with butter and pour the mixture in it and use a spoon to smooth the surface of frittata.

In the meantime, preheat the oven to 180 ºC. Then bake the vegetables frittata for 45 minutes. Because all the ovens don’t have the same heat intensity, it is better that you check the frittata after 40 minutes. And if it was not cooked yet, leave it in the oven during 5 minutes more. You know that frittata is ready, when it is slightly golden on top. After taking the frittata out from the oven and when it is cold, you can remove it from the mold and then cut it.
