Ingredients for:
Veggie Burgers

  • 100 g red kidney beans
  • 100 g chikpeas
  • 65 g rolled oats
  • 100 g mushrooms
  • 1 onion
  • 1 tomato
  • 2 pickles
  • 1 avocado
  • 100 g lettuce
  • 1 tbsp corn flour
  • 1/4 tsp red chilli powder
  • Olive oil
  • Salt & black pepper

Instructions

To prepare veggie burgers, first soak the red kidney beans and chickpeas for 12 hours. Then cook them in boiling water for 30 minutes. After that, drain them in a colander and set aside.

Then chop the onion finely. After that, in a bowl mash the avocado with a fork and then mix it with the chopped onion. Next, slice the tomato and mushrooms and cut the lettuce. Then with a fruit peeler, slice the pickles finely.

Now in a bowl, add the red kidney beans, chickpeas, oats, red chilli powder, corn flour, black pepper and salt. Then mash all the ingredients with a potato masher. Don’t use a food processor to mix the ingredients, because the mixture will turn out like a paste. But by using a potato masher, these veggie burgers will have a better texture. Now shape the mixture into 4 equal patties.

Then in a non-stick frying pan over medium high heat, fry the burger patties with olive oil from both sides until they are slightly brown. After that, fry the mushrooms as well.

Now to assemble the burgers, first cover each bun with 1 tablespoon of the avocado mixture. Then add the sliced pikles. After that, add the patties, fried mushrooms, tomato and lettuce on top of them. The veggie burgers are ready to serve.
