Ingredients for:
Artichoke Pizza

For pizza topping:

  • 6 artichoke hearts ( jarred or frozen)
  • 14 pitted black olives
  • 1/2 purple onion
  • 200 g shredded mozzarella
  • 2 tbsp tomato sauce
  • 2 tsp oregano

For pizza dough:

  • 125 g flour
  • 75 ml lukewarm water
  • 5 g dry yeast
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp olive oil

Instructions

This home made artichoke pizza recipe is for 1 pizza of 30 cm and first we prepare the pizza dough.

Therefore in a big bowl add the flour, dry yeast, salt and sugar and use a wooden spoon to mix them well. Then add the lukewarm water gradually to the bowl and start to knead the dough by your hand more or less for 5 minutes. Continue kneading until the dough is forming into an elastic ball and it pulls away from the sides of the bowl. Now lightly dust your hands with flour and form the pizza dough into a round ball and transfer it to a clean bowl brushed with olive oil. Then cover the bowl with plastic wrap and leave it in a warm place. Allow dough to rise for 45 minutes or until it is doubled in size.


Meanwhile we prepare the pizza topping. If the hearts of artichoke are jarred, first drain and then dry them well with the kitchen towel. If they are frozen, first defrost them and then dry them with the kitchen towel as well. After that, slice the artichokes and black olives in half. Then slice the onion finely.

After 45 minutes and once the dough has risen, gently deflate it using your hands. Then transfer the dough to a lightly floured surface and knead about 3 minutes. Use your hands to form a 30 cm round and avoid to touch the edges of the dough. Now transfer dough to a parchment paper lined pizza pan.

It is time to add the toppings for the artichoke pizza; first add the tomato sauce and spread it with a spoon to cover the dough. Then spread evenly half of the shredded mozzarella on top of the tomato sauce. Then add the onion, arthichokes, olives, oregano and the rest of the cheese.

Finally bake the artichoke pizza in preheated oven to 220 ºC for 20 minutes until its crust is slighlty golden.
