Ingredients for Arugula Pizza

For pizza topping:

  • 50 g arugula
  • 4 mushrooms
  • 1 onion
  • 40 g pitted green olives
  • 4 tbsp tomato sauce
  • 400 g grated mozzarella
  • 1 tbsp oregano

For pizza dough:

  • 250 g flour
  • 150 ml lukewarm water
  • 1 packet dry yeast (7 g)
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp olive oil

Instructions for Arugula Pizza

This arugula pizza recipe is for 2 pizzas and first we prepare the pizza dough.

Therefore in a large bowl add the flour, dry yeast, salt and sugar and use a wooden spoon to mix them well. Then add the lukewarm water gradually to the bowl and start to knead the dough by your hand more or less for 5 minutes. Continue kneading until the dough is forming into an elastic ball and it pulls away from the sides of the bowl. Now lightly dust your hands with flour and form the pizza dough into a round ball and transfer it to a clean bowl brushed with olive oil. Then cover the bowl with plastic wrap and leave it in a warm place. Allow dough to rise for 45 minutes or until it is doubled in size.

Meanwhile we prepare the pizza toppings. First chop the onion in julienne. Then slice the mushrooms and cut in half the green olives.

After 45 minutes and once the dough has risen, gently deflate it using your hands and divide it into two equal parts. Then transfer the doughs to a lightly floured surface and knead for about 3 minutes. Use your hands or a rolling pin to shape the doughs. Now transfer doughs to parchment paper-lined pizza pans.

It is time to add the toppings for the arugula pizza; add in equal parts all the prepared ingredients to each dough. First add the tomato sauce and spread it with a spoon to cover the doughs. Then add 100 g of grated mozzarella on each dough. After that, add the chopped onion, sliced mushrooms, green olives and arugula in equal amounts to each dough. Also add the oregano and the rest of the mozzarella cheese on top of all the ingredients.

Finally bake the arugula pizzas in preheated oven to 220 ºC for 30 minutes.

Tip:

You can add arugula to pizza after cooking it.
