Ingredients for Eggplant Pizza

For pizza topping:

  • 1 eggplant
  • 2 tomatoes
  • 1 red bell pepper
  • 1 Cubanelle pepper
  • 400 g grated mozzarella cheese
  • 1 onion
  • 2 tbsp tomato sauce
  • 1 tbsp oregano
  • 3 tbsp olive oil

For pizza dough:

  • 250 g flour
  • 150 ml lukewarm water
  • 1 packet dry yeast (7 g)
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp olive oil

Instructions

This eggplant pizza recipe is for 2 pizzas and we prepare the pizza dough first.

Therefore in a large bowl, add the flour, dry yeast, salt, and sugar and use a wooden spoon to mix them well. Then gradually add the lukewarm water to the bowl and begin to knead the dough by hand for about 5 minutes. Continue kneading until the dough is forming into an elastic ball and it pulls away from the sides of the bowl. Now lightly dust your hands with flour and form the pizza dough into a round ball and transfer it to a clean bowl brushed with olive oil. Then cover the bowl with plastic wrap and leave it in a warm place. Allow dough to rise for 45 minutes or until it is doubled in size.

Meanwhile, we prepare the pizza toppings. First, peel and slice the eggplant. Then in a bowl add water with 1 tablespoon of salt and soak the eggplant slices for 30 minutes. By doing this, when frying the eggplant slices they will not absorb too much oil. After 30 minutes drain and wash the eggplant slices under water and dry them completely with a kitchen towel. Next, fry the eggplant slices with olive oil until they are golden brown on both sides. Then cut the red bell pepper and Cubanelle pepper into strips. After that, cut the onion and tomatoes into slices.

After 45 minutes and once the dough has risen, gently deflate it with your hands and divide it into two equal parts. Next, transfer the doughs to a lightly floured surface and knead for about 3 minutes. Use your hands or a rolling pin to shape the doughs and then transfer them to the pizza pans lined with parchment papers.

Adding the pizza toppings

Time to add the toppings to the eggplant pizza. First, add the tomato sauce and spread it evenly with a spoon to cover the doughs. Then add 100 g of grated mozzarella to each dough. After that, add the bell pepper and Cubanelle pepper first and then add the sliced onion and tomatoes. Next, add the fried eggplant slices, oregano and the rest of the mozzarella cheese on top of the ingredients.

Now bake the pizzas in the preheated oven to 220 ºC for 30 minutes until their crust is slightly golden.

Note: Also, you can grill the eggplant instead of frying it.
