Ingredients for eggplant pizza

For pizza topping:

  • 1 eggplant
  • 2 tomatoes
  • 1 red paprika
  • 1 long green pepper
  • 400 g grated mozzarella
  • 1 onion
  • 2 tbsp tomato sauce
  • 1 tbsp oregano
  • 3 tbsp olive oil

For pizza dough:

  • 250 g flour
  • 150 ml lukewarm water
  • 1 packet dry yeast (7 g)
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp olive oil

Instructions for eggplant pizza

This eggplant pizza recipe is for 2 pizzas and first, we prepare the pizza dough. Therefore in a large bowl add the flour, dry yeast, salt and sugar and use a wooden spoon to mix them well. Then add the lukewarm water gradually to the bowl and start to knead the dough by your hand more or less for 5 minutes. Continue kneading until the dough is forming into an elastic ball and it pulls away from the sides of the bowl. Now lightly dust your hands with flour and form the pizza dough into a round ball and transfer it to a clean bowl brushed with olive oil. Then cover the bowl with plastic wrap and leave it in a warm place. Allow dough to rise for 45 minutes or until it is doubled in size.

Meanwhile, we prepare the pizza toppings. First peel and slice the eggplant. Then in a bowl add water with 1 tablespoon salt and soak the eggplant slices in it for 30 minutes. This way when frying the slices they will not absorb too much oil. After 30 minutes drain and wash the eggplant slices under the water and dry them well with kitchen towel. Now fry the eggplant slices with olive oil until they are golden on both sides. Then chop the red paprika and green peppers. After that, slice the onion and tomatoes.

After 45 minutes and once the dough has risen, gently deflate it using your hands and divide it into two equal parts. Then transfer the doughs to a lightly floured surface and knead about 3 minutes. Use your hands or a rolling pin to shape the doughs. Now transfer doughs to parchment paper-lined pizza pans.

It is time to add the toppings for the eggplant pizza; add in equal parts all the prepared ingredients to each dough. First add the tomato sauce and spread it with a spoon to cover the doughs. Then add 100 g of grated mozzarella on each dough. After that, add the chopped red paprika and green pepper first and then add the sliced onion and tomatoes. Now add the fried eggplant slices, oregano and the rest of the mozzarella cheese on top of all the ingredients.

Finally bake the eggplant pizzas in preheated oven to 220 ºC for 30 minutes.
