In this recipe, by frying mushrooms in olive oil with garlic first, this oyster mushroom pizza comes out even more delicious.

Ingredients for:
Oyster Mushroom Pizza
For pizza topping:
- 100 g oyster mushrooms
- 2 plum tomatoes
- 1 cubanelle pepper
- 125 g fresh mozzarella
- 1 garlic clove
- 2 tsp oregano
- 1 tbsp olive oil
- Salt & pepper
For pizza dough:
- 125 g flour
- 75 ml lukewarm water
- 5 g dry yeast
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 tbsp olive oil
Therefore in a big bowl add the flour, dry yeast, salt and sugar and use a wooden spoon to mix them well. Then add the lukewarm water gradually to the bowl and start to knead the dough by hand more or less for 5 minutes. Continue kneading until the dough is forming into an elastic ball and it pulls away from the sides of the bowl. Now lightly dust your hands with flour and form the pizza dough into a round ball and transfer it to a clean bowl brushed with olive oil. Then cover the bowl with plastic wrap and leave it in a warm place. Allow dough to rise for 45 minutes or until it is doubled in size.

Meanwhile we prepare the pizza toppings. Cut the tomatoes into slices, cut the mushrooms and cubanelle pepper into stripes and mince the garlic. Then in a frying pan over high-heat, warm the olive oil and fry the oyster mushrooms with garlic, salt and pepper. After that, set them aside to slightly cool.
After 45 minutes and once the dough has risen, gently deflate it using your hands. Then transfer the dough to a lightly floured surface and knead about 3 minutes. Use your hands to form a 30 cm round and avoid to touch the edges of the dough. Now transfer dough to a parchment paper lined pizza pan.
Adding the pizza toppings:
It is time to add the toppings for the oyster mushroom pizza ; first add half of the fresh mozzarella cheese and spread it evenly. Then add the sliced tomatoes, cubanelle pepper, mushrooms, oregano and the rest of the cheese.
Finally bake the pizza in preheated oven to 220 ºC for 20 minutes until its crust is slighlty golden.
