Ingredients for:
Quinoa Pizza

For pizza topping:

  • 150 g shredded mozzarella cheese
  • 1 tomato
  • 1 spring onion
  • 10 green olives, pitted
  • 1 tsp oregano

For pizza base:

  • 100 g quinoa
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions

To make this quinoa pizza, cook the quinoa in boiling water for 15 minutes and then drain it. Next, with an electric hand blender, blend the quinoa with olive oil and salt until they are thoroughly combined and smooth. Now pour the blended quinoa mixture onto a parchment paper-lined pizza pan and use a silicone spatula to press it into a flat 24 cms round shape Then bake the quinoa base in the preheated oven to 220 ºC for 15 minutes.

Meanwhile, we prepare the pizza toppings. First finely slice the tomato. Then chop the spring onion into rings and cut the olives in half.

After 15 minutes, remove the quinoa base from the oven to add the toppings. First, add half of the shredded mozzarella on top of the quinoa base. Then add the tomato slices, spring onion rings, green olives, oregano, and the rest of the cheese. Now bake the quinoa pizza in the preheated oven to 220 ºC for 10 minutes until the cheese is melted. After that, your pizza is ready to serve.
