Ingredients for:
Quinoa Pizza

For pizza topping:

  • 150 g mozzarella, grated
  • 1 tomato
  • 1 spring onion
  • 10 green olives, pitted
  • 1 tsp oregano

For pizza base:

  • 100 g quinoa
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions

To prepare this quinoa pizza, first cook the quinoa in boiling water for 15 minutes and then drain it. Then blend the quinoa with the olive oil and salt with an electric hand blender until it is thoroughly combined and smooth. Now pour the prepared mixture over a parchment paper-lined pizza pan and use a silicone spatula to press it into a flat, round shape of 24 cms. Then bake the quinoa base in preheated oven to 220 ºC for 15 minutes.

Meanwhile the quinoa base is baked in the oven, you can prepare the pizza topping. First slice the tomato, chop the spring onion and then cut the olives in half.

After 15 minutes, remove the quinoa base from the oven to add the toppings. First add half of the grated mozzarella, then add the tomato, spring onion, green olives, oregano and finally the rest of the cheese to it. And again bake the quinoa pizza in the oven to 220 ºC for 10 minutes. After that, your pizza is ready to serve.
