Ingredients for:
Kidney Beans Salad

  • 100 g kidney beans
  • 1 potato
  • 1 carrot
  • 6 mushrooms
  • 100 g parsley
  • 1 lemon
  • 125 g greek yogurt
  • 3 tbsp olive oil
  • Salt & pepper


To prepare this kidney beans salad, first soak the kidney beans in water for 12 hours. Then cook them in boiling water for 30 minutes and after that drain them.

Meanwhile peel and then cut the potato into thick pieces. After that cut the mushrooms in half. Now pour the potato and mushrooms into an oven tray and evenly spread them out. Then add 2 tablespoons of olive oil and a little bit of salt to them and bake them in preheated oven to 200 ºC for 30 minutes.

Next, peel and then grate the carrot and mince the parsley. Then in a large bowl, mix all the prepared ingredients with the lemon juice, olive oil, greek yogurt, salt and pepper. Your salad is ready to serve.
