Ingredients for:
Mixed Pasta Salad
- 250 g penne pasta
- 150 g lettuce
- 4 carrots
- 2 celery stalks
- 10 cherry tomatoes
- 12 pitted green olives
- 1 red onion
- 1 lemon
- 25 g pumpkin seeds
- Olive oil
- Salt & pepper
Now in a pot over high-heat, cook the penne pasta in boiling water with a pinch of salt according to packet instructions (but it is better that you cook the pasta al dente), and then drain it in a colander and let it slightly cool.
Then in a large bowl, add the prepared vegetables and penne pasta with pumpkin seeds and green olives. Mix the salad and then serve it in individual salad bowls or salad plates.
