Ingredients for Orecchiette Pasta Salad

  • 250 g orecchiette pasta
  • 6 mushrooms
  • 100 g baby spinach
  • 50 g lamb’s lettuce
  • 100g cottage cheese
  • 2 celery stalks
  • 2 tomatoes
  • 1 lemon
  • 1 garlic clove
  • 4 tbsp olive oil
  • Salt & pepper

Instructions

First, cook the orecchiette pasta in boiling water with a pinch of salt according to packet instructions ( between 12-14 minutes ). Then drain it and set it aside to cool.

Next, slice the mushrooms and tomatoes, mince the garlic and chop the celery stalks into small pieces.

After that, place a medium-size skillet over medium-high heat and add 2 tablespoons of olive oil to it. When the olive oil is warm, add the mushrooms, salt, and pepper. Sauté for about 3 minutes until the mushrooms are soft. Then add the baby spinach and minced garlic. Sauté for about 2 minutes more until the spinach is wilted and soft. Then remove the skillet from the heat.

Now in a large bowl, mix the pasta with lamb’s lettuce, cottage cheese, celery stalks, tomatoes, and mushroom and spinach mixture. Serve the salad in salad bowls or plates with fresh lemon juice and olive oil.

Note: If you want to add a little more crunchiness to this warm salad, almonds and walnuts are a great choice.
