Ingredients for Orecchiette Pasta Salad

  • 250 g orecchiette pasta
  • 6 mushrooms
  • 100 g baby spinach
  • 50 g lamb’s lettuce
  • 100g cottage cheese
  • 2 celery stalks
  • 2 tomatoes
  • 1 lemon
  • 1 garlic clove
  • 4 tbsp olive oil
  • Salt & pepper


First, cook the orecchiette pasta in boiling water with a pinch of salt according to the packet instructions ( between 12-14 minutes ). Then drain it and set it aside to cool.

Next, slice the mushrooms and tomatoes, mince the garlic and chop the celery stalks into small pieces.

After that, place a medium-size skillet over medium-high heat and add 2 tablespoons of olive oil to it. When the olive oil is warm, add mushrooms, salt, and pepper. Sauté the ingredients for about 3 minutes until the mushrooms are soft. Then add the baby spinach and minced garlic to the rest of the ingredients. Sauté for about 2 minutes more until the spinach is wilted and soft. Then remove the skillet from the heat.

Now in a large bowl, add the cooked pasta with lamb’s lettuce, cottage cheese, celery stalks, tomatoes, and the mushroom and spinach mixture and mix all the ingredients. Then serve the salad in salad bowls or plates with fresh lemon juice and olive oil for the dressing.

Notes: If you want to add a little more crunchiness to this warm salad, almonds and walnuts are a great choice. And it is always best to cook the pasta al dente, which means it is cooked to be firm to the bite.
