Ingredients for Potato Salad

Potato Salad recipe
  • 500 g potato
  • 200 g cauliflower
  • 150 g lettuce
  • 100 g corn kernels
  • 10 cherry tomatoes
  • 1 red onion
  • 12 pitted black olives
  • 1 lemon
  • Olive oil
  • Salt & pepper


To prepare this potato salad, wash the potatoes under the water with a kitchen brush first because we will prepare them with their skin. Then cook the potatoes in boiling water for 10 minutes and drain them. After that, transfer the potatoes into a baking tray, season them with salt and pepper and drizzle with olive oil. Then bake the potatoes in preheated oven to 200 ºC for 10 minutes.

Next, cook the corn kernels in boiling water for 5 minutes and then drain them. Meanwhile, chop the lettuce, slice the onion and separate the little florets of cauliflower by hand.

When the potatoes and corn kernels are slightly cool, mix them with the chopped lettuce, cauliflower, cherry tomatoes, sliced red onion and black olives in a large bowl and then serve them in salad bowls or plates.

For salad dressing: mix the fresh lemon juice with olive oil, salt and pepper and then serve the salad with it.

Note: If you prefer, instead of cauliflower you can add broccoli to your salad.
