Ingredients for:
Quinoa Salad

  • 150 g Quinoa
  • 25 g Lamb’s lettuce
  • 25 g Green cabbage
  • 1 Holandes cucumber
  • 25 g Lettuce
  • 1 Tomato
  • 25 g Cauliflower
  • 1 Lemon
  • 3 tbsp Olive oil
  • Salt & Pepper

To prepare this quinoa salad, it is necessary to wash quinoa previously to eliminate its bitterness. Therefore, in a big bowl pour quinoa and cover it with water and stir it well. After that, drain the quinoa in a colander and wash it again until the water runs clear.

Now in a saucepan cook the quinoa over medium-low heat along with the water, a splash of olive oil, and a little bit of salt. Then cover the pot and let the quinoa cook for 20 minutes. This way, the intensity of the boiling water makes the quinoa gurgle a bit during cooking. Then drain the quinoa in a colander and separate it with a fork because this way the grains will not stick together. Now that quinoa is ready and slightly cool, cut all the vegetables.

Then in a large bowl mix the quinoa with lamb’s lettuce, green cabbage, cucumber, lettuce, tomato, and cauliflower. Finally, mix the lemon juice with olive oil, salt, and pepper and serve the quinoa salad with the dressing.

Quinoa was an important crop for the Inca empire. It has been eaten for thousands of years in South America and recently has become a trending superfood. There are three main types of quinoa: white, red, and black. Quinoa is gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E, and various antioxidants.
