Roasted Asparagus Salad

  • 300 g asparagus
  • 150 g lettuce
  • 300 g potatoes
  • 2 avocados
  • 2 eggs
  • 6 red radishes
  • 50 g cilantro
  • 1 lemon
  • Olive oil
  • Salt and pepper

Instructions

To prepare this oven-roasted asparagus salad, first, we prepare the asparagus and potatoes. Therefore, wash and dry the asparagus. And since we are not peeling the potatoes, scrub them under water and then dry them. Then chop the tough ends of the asparagus and place them in a single layer on a baking sheet. Next, cut the potato into thick pieces and place them on a baking sheet as well.

Then drizzle both the asparagus and potatoes with olive oil and season them with salt and pepper. Now bake them in the preheated oven to 200 ºC for 20 minutes until they are tender and crisp.

Meanwhile, cook the eggs in boiling water for 10 minutes. Then peel them and cut them in half. After that, slice the avocados and red radishes. Also, chop the lettuce and mince the cilantro.

Now that all the ingredients for the salad are ready, arrange them in a salad dish, add olive oil and fresh lemon juice to your salad and then serve it.
