You can easily prepare this tasty trottole pasta salad that is perfect as a summertime lunch or as a side dish, in just 20 minutes.

Ingredients for Trottole Pasta Salad
- 250 g trottole pasta
- 90 g salty lupini beans
- 50 g lamb’s lettuce
- 50 g capers
- 1 tomato
- 1 cucumber
- 2 eggs
- 1 lemon
- 2 tbsp olive oil
- Salt & pepper
Instructions

Cook the trottole pasta in boiling water with a pinch of salt according to packet instructions ( between 8-9 minutes ). Then drain it and set it aside to cool.

Also, cook the eggs in boiling water for about 10 minutes. Then peel the eggs and cut them into quarters.

After that, peel the cucumber and cut it into half-moons. Slice the tomato as well.
Now in a large bowl, mix the pasta with lupini beans, lamb’s lettuce, capers, tomato, and cucumber.
Then serve the trottole pasta salad in a salad dish with the eggs. For the salad dressing: mix the lemon juice with olive oil, salt, and pepper and serve the pasta salad with it.
