White Asparagus Salad

Ingredients for White Asparagus Salad

Asparagus Salad Recipe, a plate with white asparagus, sliced avocado, sliced chives, sliced cherys tomatoes, and sliced cucumber and carrot.
  • 6 spears of white asparagus (jarred or canned)
  • 200 g romaine lettuce
  • 1 cucumber
  • 1 avocado
  • 2 carrots
  • 2 scallions
  • 12 cherry tomatoes
  • 1 lemon
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp hulled sunflower seeds
  • Salt & pepper


To prepare this salad, first, peel the carrots and cucumber with a vegetable peeler. Then with the same peeler or a mandoline, slice the carrots and cucumber thinly lengthwise.

After that, chop the lettuce into bite-sized pieces, cut the cherry tomatoes in half, slice the scallions into rings and slice the avocado as well.

Now in a serving salad dish, first add the lettuce. Next, roll the sliced carrots and cucumber and then add them to one side of the dish. Then add the prepared cherry tomatoes, avocado, scallions, spears of white asparagus, and sunflower seeds to the salad.

For salad dressing:

Mix the lemon juice with honey, olive oil, salt and pepper and serve your salad with it.

Note: Instead of first peeling and then slicing and rolling the carrots and cucumber, which takes time, you can grate the carrots and cut the cucumber into thin, round slices.
