  • 2 zucchini (medium)
  • 2 eggs
  • 30 g flour
  • 50 g mint leaves
  • 30 g walnuts
  • 125 g greek yogurt
  • 1 garlic clove
  • 1 tsp dried dill
  • 3 tbsp olive oil
  • Salt and pepper


To prepare zucchini patties, first grate the zucchini. Then in a bowl mix the grated zucchini with 1 teaspoon of salt. After that, spread the zucchini out onto a tea towel and let it sit for 10 minutes. Then over a bowl, fold up the tea towel and try to extract as much liquid as possible, otherwise patties will come out soggy.

Next, chop the walnuts and mint leaves. Then in a bowl mix the eggs with chopped walnuts, mint leaves, salt and pepper. Then add the flour first and next add the grated zucchini and mix until everything is completely combined.

After that, mince the garlic and then in a little bowl mix it with greek yogurt, a pinch of salt and dried dill.

Now in a frying pan or skillet over medium-high heat, warm the olive oil and then drop in 2 spoonfuls of the zucchini mixture. Lightly press with the back of a spoon the patties to flatten them and cook them on both sides until they are golden, that will take 5 to 6 minutes.

Then serve the zucchini patties with the yogurt sauce.
