- 100 g cheddar cheese
- 90 g flour
- 60 g unsalted butter
- 9 g sea salt
- 1 tbsp ice cold water
To prepare cheese crackers, first grate or chop finely the butter and cheese. It is important that both butter and cheese are cold. Then mix the cheese, butter, flour and salt in a bowl. After that, add all the combined ingredients into a food processor. When the ingredients are fully combined and the texture is creamy, add the ice cold water and pulse until the water is completely incorporated.
Then press the dough into a flat disc, wrap it with plastic wrap and chill it in the fridge for 30 minutes.
After 30 minutes, line a cookie sheet with parchment paper. Then cover the dough between 2 plastic wraps and with a rolling pin, roll out the dough to a thickness of 3 mm. After that, with a cookie cutter, cut the dough and transfer the cut crackers to the parchment-lined cookie sheet. Leave a little sapce between each cracker, as they will raise a bit. Then with a fork punch holes into each cracker.
Now bake the cheese crackers in preheated oven to 180 ºC for 15 minutes until their edges become golden.
