Ingredients for:
Green Hummus
- 200 g chickpeas
- 100 g baby spinach
- 2 tbsp tahini
- 1 garlic clove
- 1 lemon
- 5 tbsp olive oil
- 4 to 5 tbsp of water
- Sea salt
Instructions
To prepare green hummus, first soak the chickpeas for 12 hours. Then cook them in boiling water for 30 minutes and after that, drain them.
Now in a food processor add the chickpeas ( keep 8 or 10 chickpeas for garnish ), baby spinach, tahini, garlic clove, fresh lemon juice, 4 tablespoons of olive oil and sea salt. Puree for 5 minutes until all the ingredients are well combined and smooth. Then add the water, scrape the sides down and put the food processor to work again for 3 minutes. If the hummus seems too thick, add in 1 or 2 extra tablespoons of water to it.
Then transfer the hummus to a serving dish, garnish it with some chickpeas, drizzle 1 tablespoon of olive oil on top and serve it.
