Homemade Pretzels

With this recipe, you can easily make these tasty and salty homemade pretzels that are perfect to accompany with mayonnaise, yellow mustard or honey.

Ingredients for Homemade Pretzels

  • 400 g flour
  • 7 g active dry yeast
  • 200 ml lukewarm water
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1/2 tsp salt
  • 1 tsp coarse sea salt

For baking soda bath:

  • 1/2 liter water
  • 40 g baking soda


In a large bowl, mix the yeast and brown sugar into lukewarm water and let it sit for 5 minutes. Then add the olive oil and salt to the bowl and with a wooden spoon mix them.

Now, add 4 batches of the flour to the ingredients in the bowl and mix them with the wooden spoon. If the dough is sticky, you can add a little more flour and knead until it is no longer sticky. When you poke the dough with your finger and it bounces back, then it is ready.

After that, first flour your work surface and then transfer the dough to it. Next, knead the dough for 4 minutes and shape it into a ball. Then cover the dough with a clean kitchen towel and let it rest for 10 minutes.

Now line a baking sheet with parchment paper and lightly spray it with nonstick spray and set it aside. After 10 minutes, with a sharp knife, cut the dough into 8 equal parts. Then roll each part into a ball and then into a 35 cm rope. After that, take the ends of each rope and draw it together so the dough forms a circle. Then, twist the ends of each rope and bring them towards yourself and press them down into a pretzel shape.

Baking soda bath

Next, in a large bowl, mix the baking soda with boiling water first and then with a slotted spatula, bath each pretzel for about 10 seconds in it. Then place them onto the prepared baking sheet and sprinkle each pretzel with coarse sea salt.

Now bake the pretzels in preheated oven to 200 ºC for 20 minutes until they are golden brown.

When the homemade pretzels are slightly cool, brush them with olive oil and they are ready to serve.

Notes: While bathing the pretzels in boiling water with baking soda, don’t keep them more than 10 seconds in it, otherwise they will have a metallic taste. Also, you can brush the pretzels with milk instead of olive oil.
